Pork Adobo (In Soy Sauce)

Ingredients:

1 kilo pork including its fat (cut into about an inch cubes)
¼ cup soy sauce
½ cup white vinegar
1~2 cups water
5 cloves garlic (chopped)
1 tsp black pepper (peppercorn)
1 pc. bay leaf (laurel)
2 tbsp. cooking oil

Cooking Instruction:

1. In a pan, sauté garlic
2. Add pork and stir fry for about a minute.
3. Add soy sauce, vinegar, bay leaf, black pepper and water enough to cover the pork. Let it boil. Reduce heat and simmer until pork becomes tender.
4. Stir occasionally until the liquid is totally drained and only the oil remain.
5. Continue stirring until the pork turn reddish brown.
10. Serve hot.
