Pork Adobo (In Asuete Sauce)

Ingredients:

½  kilo - pork including its fat (cut into about 1”~2” cubes)
5 cloves - garlic (chopped)
1 tsp - black pepper (peppercorn)
1 leaf  - bay leaf (laurel)
3/4 cup  -  vinegar
1~2 cup -  water
3 tbps.  -  cooking oil
1 tsp. -  asuete seeds
1 tsp.  -  salt

Cooking Instruction:
 
1. In a pan, sauté garlic
2. Add pork and stir fry for about a minute.
3. Add vinegar. Let it boil for at least 3 minutes without stirring.
4. Add water just enough to cover the meat and put it into boiling. Reduce heat and simmer until pork becomes tender.
5. While simmering, extract the color of asuete seeds. Put the asuete seed on a cup. Fill the cup with ½ cup hot water. Beat using pork so that the color will be released. Filter the liquid.
6. When the simmering water & vinegar is about to be drain pour the asuete into the pan.
7. Stir occasionally until the liquid is totally drain and only the oil
8. Add salt.
9. Continue stirring until the pork turn reddish brown.
10.Serve hot.
