Our team from Manila has collected these Filipino recipes during our travel and tour in the country's archepilago. Through queries and interviews with folks in towns and cities, our team came up with a compilation of fresh and raw Philippine recipes.
Philippine Cuisine is the result of diverse food cultures and influences from various foreign settlers, traders, missionaries, and colonizers. From time immemorial, the first settlers who practiced Filipino cooking were the Negritos from Borneo and Sumatra. Roasting, boiling, and grilling were the methods of cooking they used. The Malays followed and introduced the use of fish sauce. The Malays was followed by the Chinese, Hindu, and Arabs and introduced the use of noodles, curry, and chilies.
Portuguese explorer Ferdinand Magellan reached the Philippines in 1521 in an effort to circumnavigate the world. Soon after he got killed in a battle with the natives, the Spaniards colonized the Philippines for more than three centuries introducing the Catholic religion and Spanish cuisine. It was the Spaniards, who introduced the use tomatoes, corn, potatoes, olive oil, paprika, saffron, ham, cheese, cured sausages, and the idea of sautéing. Filipino recipes were then modified to a much more delicious multi-foreign recipe.
Our intention in collecting and posting these recipes is to simply show the reader the various recipes from other regions. In this way, the visitor from one region will have an idea of what dishes other folks in other regions are cooking.
