Embutido (Filipino Style Meatloaf)
Everlasting (Marikina Style Meatloaf)
Humba (Braised Pork With Sugar)
Ingredients:
1 kg - beef. (“camto” portion) . Cut into chunks.
¼ cup soy sauce
1 cup cubed fresh pineapple
½ cup whole button mushroom
1 cup tomato sauce (I used Philippine brands because some imported brands taste a little bit sour)
1 bulb - big onion (quartered)
3 cloves- garlic (chopped)
1 pc laurel leaf (bay leaf)
2 pcs medium size potatoes (quartered)
1 pc carrot (cut to about 1 inch)
1 stem of kinchay
1 cup Nestle cream
Fish sauce (patis) for seasoning.
Cooking Instruction:
1. Marinate meat with soy sauce for at least 10 minutes.
2. Put 3 tbls cooking oil in deep pan and sauté garlic, onion and marinated beef. Roll meat on the pan until beef changes color.
3. Pour in water. Add tomato sauce and laurel leaf . Bring to boil then lower the heat and simmer for at least 3 hours or until the meat is tender. Stir occasionally. Add water if needed.
4. Add potatoes, carrots and bell pepper and cook for at least 5 minutes or until vegetables becomes tender.
5. Add pineapple cubes, mushroom, Nestle cream and kinchay and simmer for another 5 minutes. Mix well.
6. Add patis to taste.
7. Serve hot
